To make this soup, you'll need:
- 1 large butternut squash, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1/2 cup of heavy cream
- 1/4 teaspoon of ground nutmeg
- Salt and pepper to taste
First, heat a large pot over medium heat and add some olive oil. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Add the diced butternut squash, chicken or vegetable broth, nutmeg, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer until the butternut squash is tender.
