Baked Sweet Potato with Black Beans, Cheese, and Sour Cream

Ingredients:

  • 4 medium sweet potatoes
  • 1 can of black beans, drained and rinsed
  • 1 cup of shredded cheese
  • 1/2 cup of sour cream
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes. Pierce each potato several times with a fork.
  3. Place the potatoes on a baking sheet and drizzle with olive oil. Rub the oil onto each potato to coat.
  4. Sprinkle each potato with salt and pepper.
  5. Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.
  6. Remove the sweet potatoes from the oven and let them cool for a few minutes.
  7. Cut a slit down the center of each potato and gently push the ends towards the center to create an opening.
  8. Top each sweet potato with a generous spoonful of black beans, shredded cheese, and a dollop of sour cream.
  9. Serve immediately and enjoy!

Tips:

  • If you want to add some extra flavor, try adding some diced tomatoes, chopped green onions, or fresh cilantro on top of your sweet potato.
  • This dish can also be made ahead of time and reheated in the oven or microwave.
  • For a vegetarian or vegan option, simply omit the cheese and sour cream or substitute with vegan alternatives.
