Baked Sweet Potato with Black Beans, Cheese, and Sour Cream
Ingredients:
- 4 medium sweet potatoes
- 1 can of black beans, drained and rinsed
- 1 cup of shredded cheese
- 1/2 cup of sour cream
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes. Pierce each potato several times with a fork.
- Place the potatoes on a baking sheet and drizzle with olive oil. Rub the oil onto each potato to coat.
- Sprinkle each potato with salt and pepper.
- Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and easily pierced with a fork.
- Remove the sweet potatoes from the oven and let them cool for a few minutes.
- Cut a slit down the center of each potato and gently push the ends towards the center to create an opening.
- Top each sweet potato with a generous spoonful of black beans, shredded cheese, and a dollop of sour cream.
- Serve immediately and enjoy!
Tips:
- If you want to add some extra flavor, try adding some diced tomatoes, chopped green onions, or fresh cilantro on top of your sweet potato.
- This dish can also be made ahead of time and reheated in the oven or microwave.
- For a vegetarian or vegan option, simply omit the cheese and sour cream or substitute with vegan alternatives.
