Ingredients:
- 1 head cauliflower, riced
- 1 lb shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- Salt and black pepper, to taste
This dish uses cauliflower rice as a healthy and low-carb alternative to regular rice. To make cauliflower rice, simply chop up a head of cauliflower into small pieces and pulse in a food processor until it's the texture of rice. Voila - you have cauliflower rice!
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add garlic and onion and sauté until onion is translucent, about 2-3 minutes.
- Add bell peppers to the skillet and sauté for 2-3 minutes until they start to soften.
- Add shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
- Add the cauliflower rice to the skillet and stir-fry for 2-3 minutes. Season with soy sauce, sesame oil, salt and black pepper to taste.
While the onion and garlic are cooking, prepare your mixed vegetables by steaming them until they're tender but still slightly crisp.
Once the shrimp are cooked, add the steamed mixed vegetables to the skillet and stir together with the shrimp and veggies.
Once everything is cooked and seasoned, you're ready to serve up your delicious and healthy cauliflower rice stir-fry with shrimp and mixed vegetables!
