Ingredients
- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 8 flour tortillas
- 2 cups shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess fat.
- Add the black beans, red bell pepper, onion, garlic, chili powder, cumin, and salt to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are tender.
- Place a flour tortilla on a flat surface. Sprinkle 1/4 cup of shredded cheddar cheese over half of the tortilla. Spoon 1/4 cup of the beef and black bean mixture over the cheese. Sprinkle with chopped cilantro. Fold the tortilla in half to enclose the filling.
- Repeat with the remaining tortillas, cheese, beef and black bean mixture, and cilantro.
- Heat a large skillet or griddle over medium-high heat. Cook the quesadillas for 3-4 minutes on each side, or until the cheese is melted and the tortillas are golden brown and crispy.
- Cut the quesadillas into wedges and serve hot, garnished with extra cilantro if desired.
