Delicious and Easy Beef and Black Bean Quesadillas

Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess fat.
  2. Add the black beans, red bell pepper, onion, garlic, chili powder, cumin, and salt to the skillet. Cook, stirring occasionally, for 5-7 minutes, or until the vegetables are tender.
  3. Place a flour tortilla on a flat surface. Sprinkle 1/4 cup of shredded cheddar cheese over half of the tortilla. Spoon 1/4 cup of the beef and black bean mixture over the cheese. Sprinkle with chopped cilantro. Fold the tortilla in half to enclose the filling.
  4. Repeat with the remaining tortillas, cheese, beef and black bean mixture, and cilantro.
  5. Heat a large skillet or griddle over medium-high heat. Cook the quesadillas for 3-4 minutes on each side, or until the cheese is melted and the tortillas are golden brown and crispy.
  6. Cut the quesadillas into wedges and serve hot, garnished with extra cilantro if desired.
