Ingredients:
- 1 can (28 ounces) whole peeled tomatoes
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
- 8 slices of bread
- 8 slices of cheddar cheese
- Butter for spreading on bread
Start by heating the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onions are translucent. Add the dried oregano and red pepper flakes and cook for another minute.
Add the can of whole peeled tomatoes, including the juice, into the pot. Use a wooden spoon to break up the tomatoes into smaller pieces. Cook for 5 minutes, stirring occasionally.
Add the vegetable broth and bring the soup to a boil. Once boiling, reduce the heat and let the soup simmer for 15 minutes.
