Delicious Pad Thai Recipe: A Classic Thai Dish with Rice Noodles, Shrimp, Tofu, Peanuts, and Sweet & Sour Sauce

Ingredients:

  • 8 oz. rice noodles
  • 2 tbsp. vegetable oil
  • 1/2 lb. shrimp, peeled and deveined
  • 1/2 cup firm tofu, diced
  • 1/4 cup peanuts, chopped
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped
  • 1 egg, beaten
  • 1/4 cup bean sprouts
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges

Begin by soaking the rice noodles in warm water for about 15 minutes, or until they are soft and pliable. Drain the noodles and set them aside.

In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the garlic and stir-fry for about 30 seconds, or until fragrant. Add the shrimp and tofu and stir-fry for about 2-3 minutes, or until the shrimp are pink and cooked through.
