If you're looking for a delicious and satisfying soup that is perfect for any occasion, look no further than Galbitang. This Korean dish is made with beef short ribs, vegetables, and a clear broth that is both flavorful and nourishing.
Ingredients:
- 2 pounds beef short ribs
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 8 cups water
- 1/2 cup daikon radish, sliced
- 2 scallions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
To begin, heat the vegetable oil in a large pot over medium-high heat. Add the beef short ribs and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 3 minutes. Add the browned beef back into the pot and pour in the water.
Bring the pot to a boil and then reduce the heat to low. Add the sliced daikon radish and chopped scallions, soy sauce, sesame oil, salt, and pepper. Cover the pot and let the soup simmer for 2-3 hours, or until the beef is tender and the broth is flavorful.
Once the soup is ready, remove the beef short ribs from the pot and shred the meat. Discard any bones or fat. Return the shredded beef to the pot and stir to combine.
To serve, ladle the Galbitang soup into bowls and garnish with sliced scallions and daikon radish. Enjoy this hearty and flavorful soup on a cold day or any day you need a satisfying meal.
