Gamjatang is a Korean soup made with pork bones, potatoes, and a variety of vegetables. It is a hearty and comforting dish that is perfect for cold weather. The soup is known for its rich and spicy flavor, which comes from the use of gochujang, a Korean chili paste. Here is a recipe for making gamjatang at home:
Ingredients:
- 2 pounds pork bones
- 1 onion, chopped
- 8 cloves garlic, minced
- 2 tablespoons gochujang
- 1 tablespoon gochugaru (Korean chili flakes)
- 2 potatoes, peeled and chopped
- 1 zucchini, chopped
- 4 green onions, chopped
- 8 cups water
- Salt and pepper to taste
1. In a large pot, add the pork bones and enough water to cover them. Bring to a boil and then reduce the heat to low. Simmer for 30 minutes, skimming off any impurities that rise to the surface.
2. Add the chopped onion, garlic, gochujang, and gochugaru to the pot. Stir well and continue to simmer for another 30 minutes.
3. Add the chopped potatoes and zucchini to the pot. Simmer for an additional 20 minutes, or until the potatoes are tender.
4. Season the soup with salt and pepper to taste. Serve hot, garnished with chopped green onions.
