Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup of fresh spinach, chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of mayonnaise
- 1/4 cup of grated parmesan cheese
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1 tsp of dried oregano
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1 tbsp of olive oil
First, preheat your oven to 375°F. Take the chicken breasts and make a small slit in the middle of each one, being careful not to cut all the way through. This will create a pocket for the stuffing.
In a small bowl, mix together the chopped spinach, crumbled feta cheese, mayonnaise, parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Stuff each chicken breast with the mixture, using toothpicks to secure the opening if necessary.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, until golden brown. Then, transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through and the internal temperature reaches 165°F.
Once done, remove the toothpicks and serve hot. You can pair it with a side salad or roasted vegetables for a complete meal.
