Ingredients:
- 1 lb. large shrimp, peeled and deveined
- 2 medium zucchini, spiralized into noodles
- 4 cloves garlic, minced
- 3 tbsp. butter
- 1/4 cup chicken broth
- 2 tbsp. lemon juice
- 1 tbsp. olive oil
- Salt and pepper, to taste
Clean and devein the shrimp, and set aside.
Spiralize the zucchini into noodles, and set aside.
In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side, until pink and cooked through.
Remove the shrimp from the skillet and set aside. Add the chicken broth and lemon juice to the skillet and stir to combine. Add the zucchini noodles and cook for 2-3 minutes, until tender but still slightly firm.
Return the shrimp to the skillet and toss with the zucchini noodles. Drizzle with olive oil and sprinkle with salt and pepper to taste.
Serve hot and enjoy!
