Spicy Vegetable Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and garlic and sauté for 2-3 minutes, until fragrant.
  3. Add diced carrots, celery, red and green bell peppers and sauté until vegetables are slightly softened, about 5 minutes.
  4. Add the can of diced tomatoes, vegetable broth, cumin, chili powder, paprika, and cayenne pepper. Bring to a boil.
  5. Reduce heat to low and simmer for 20-25 minutes, or until vegetables are tender.
  6. Add the drained and rinsed black beans and corn kernels and continue to simmer for another 5-10 minutes.
  7. Season with salt and pepper to taste.
