Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion and garlic and sauté for 2-3 minutes, until fragrant.
- Add diced carrots, celery, red and green bell peppers and sauté until vegetables are slightly softened, about 5 minutes.
- Add the can of diced tomatoes, vegetable broth, cumin, chili powder, paprika, and cayenne pepper. Bring to a boil.
- Reduce heat to low and simmer for 20-25 minutes, or until vegetables are tender.
- Add the drained and rinsed black beans and corn kernels and continue to simmer for another 5-10 minutes.
- Season with salt and pepper to taste.
