Ingredients:
- 2 tablespoons unsalted butter
- 1 medium onion, chopped
- 1 tablespoon all-purpose flour
- 4 cups canned whole peeled tomatoes, crushed by hand
- 2 cups chicken or vegetable broth
- 1/2 cup heavy cream
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices of bread
- 4 slices of cheddar cheese
- 2 tablespoons olive oil
Instructions:
- Melt butter in a large pot over medium heat. Add chopped onion, and cook until soft and translucent, about 5 minutes.
- Sprinkle flour over the onions and stir to combine. Cook for 1-2 minutes, stirring constantly.
- Add crushed tomatoes, broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender or transfer to a blender to puree the mixture until smooth.
- Add heavy cream and stir to combine. Continue to cook for an additional 5 minutes or until heated through.
- Meanwhile, heat olive oil in a skillet over medium heat. Place a slice of cheese on each slice of bread, and place the slices in the skillet. Cook until bread is golden brown and cheese is melted.
- Serve soup hot with a grilled cheese sandwich on the side.
