Ingredients:
- 1 1/2 lbs beef stew meat, cut into 1-inch pieces
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp thyme
- 1 tsp salt

- 1 cup beef broth
- 1/4 cup flour
- 1/4 cup water

Instructions:
- Turn on the Instant Pot to the sauté function and add the olive oil.
- Add the beef stew meat and sauté until browned on all sides. This should take about 5 minutes.
- Add the onion and garlic and sauté for another 2 minutes.
- Add the paprika, thyme, salt, and black pepper and stir to combine.
- Add the mushrooms and beef broth and stir to combine.
- Secure the lid on the Instant Pot and set the pressure release valve to the sealing position.
- Set the Instant Pot to high pressure for 25 minutes.
- When the timer goes off, let the pressure release naturally for 10 minutes before releasing the remaining pressure manually.
- In a small bowl, whisk together the flour and water to make a slurry.
- Turn on the Instant Pot to the sauté function and add the flour slurry to the stew.
- Stir until the stew thickens, which should only take a few minutes.
