Delicious Instant Pot Beef and Mushroom Stew Recipe

Ingredients:

  • 1 1/2 lbs beef stew meat, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb mushrooms, sliced
  • 1 cup beef broth
  • 1/4 cup flour
  • 1/4 cup water
  • 2 tbsp olive oil

Instructions:

  1. Turn on the Instant Pot to the sauté function and add the olive oil.
  2. Add the beef stew meat and sauté until browned on all sides. This should take about 5 minutes.
  3. Add the onion and garlic and sauté for another 2 minutes.
  4. Add the paprika, thyme, salt, and black pepper and stir to combine.
  5. Add the mushrooms and beef broth and stir to combine.
  6. Secure the lid on the Instant Pot and set the pressure release valve to the sealing position.
  7. Set the Instant Pot to high pressure for 25 minutes.
  8. When the timer goes off, let the pressure release naturally for 10 minutes before releasing the remaining pressure manually.
  9. In a small bowl, whisk together the flour and water to make a slurry.
  10. Turn on the Instant Pot to the sauté function and add the flour slurry to the stew.
  11. Stir until the stew thickens, which should only take a few minutes.
