If you're a fan of spicy, flavorful noodles, then you must try this delicious Singapore Noodles recipe. Made with rice vermicelli noodles, fresh vegetables, shrimp, and a blend of aromatic spices, this dish is sure to satisfy your cravings.
To start, soak 200 grams of rice vermicelli noodles in hot water for 10 minutes or until they soften. Drain and set aside.
In a large wok or frying pan, heat up 2 tablespoons of oil over high heat. Add 1 diced onion, 1 sliced red bell pepper, and 1 sliced carrot. Stir-fry for 2-3 minutes until the vegetables start to soften.
Next, add 200 grams of raw shrimp to the pan and stir-fry for another 2-3 minutes until the shrimp turn pink.
Push the vegetables and shrimp to one side of the pan and crack in 2 eggs on the other side. Scramble the eggs until cooked and then mix everything together.
Add the softened noodles to the pan along with 1 tablespoon of curry powder, 1 teaspoon of turmeric powder, 1/2 teaspoon of chili flakes, and 2 tablespoons of soy sauce. Toss everything together until the noodles are coated in the spices and sauce.
