Gamjatang is a classic Korean soup that features pork bones, potatoes, and vegetables in a spicy broth. It's a hearty and comforting dish that's perfect for cold weather or anytime you're craving something warming and flavorful.
Ingredients:
- 1-2 lbs pork bones
- 6 cups water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tbsp gochugaru (Korean chili flakes)
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 2 potatoes, peeled and chopped
- 1 zucchini, chopped
- 4 green onions, chopped
- 1/2 cup chopped cabbage
- 1 tbsp sesame oil
Instructions:
- Preheat your oven to 350°F. Rinse the pork bones and place them on a baking sheet. Roast in the oven for 30 minutes until lightly browned.
- In a large pot or Dutch oven, add the roasted pork bones, water, onion, and garlic. Bring to a boil, then reduce heat and simmer for 2-3 hours, skimming off any foam or impurities that rise to the surface.
- After 2-3 hours, remove the pork bones from the broth and let cool slightly. Using your hands or a knife, remove any meat and return it to the pot.
- Add the gochugaru, gochujang, soy sauce, and fish sauce to the pot. Stir to combine and simmer for 10 minutes.
- Add the chopped potatoes, zucchini, green onions, and cabbage to the pot. Simmer for an additional 20-30 minutes until the vegetables are tender.
- Stir in the sesame oil and serve hot, garnished with additional green onions and/or cilantro if desired.
