Ingredients:
- 4 chicken breasts, bone-in and skin-on
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1 cup chicken broth
- 1/2 cup dry red wine
- 1 tablespoon tomato paste
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
First, season the chicken breasts with salt and pepper. Then, turn on the Instant Pot and select the "Sauté" function. Once it's hot, add the chicken and cook for about 4-5 minutes on each side until browned. Remove the chicken from the pot and set it aside.
