Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 cup stone-ground grits
- 4 cups water
- 1/4 cup unsalted butter
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red bell pepper, seeded and finely chopped
- 1 green bell pepper, seeded and finely chopped
- 1/4 cup chicken broth
- 1 tablespoon hot sauce
Start by seasoning the shrimp with paprika, cayenne pepper, garlic powder, salt, and black pepper. Heat the olive oil in a large skillet over medium heat, then add the shrimp and cook until they turn pink, about 3-4 minutes per side. Remove the shrimp from the skillet and set aside.
In a large pot, bring the water to a boil. Add the grits and stir continuously for about 5 minutes, until they thicken. Reduce the heat to low, cover the pot, and let the grits simmer for about 30 minutes, stirring occasionally. Add the butter and Parmesan cheese and stir until the cheese is melted and the grits are creamy.
Meanwhile, in the same skillet used to cook the shrimp, add the minced garlic, onion, and bell peppers. Cook until the vegetables are tender, about 5 minutes. Add the chicken broth and hot sauce, and simmer for another 5 minutes, stirring occasionally.
To serve, spoon the grits onto a plate, top with the sautéed vegetables and shrimp. Garnish with fresh parsley or chopped green onions if desired.
