Turkey Chili with Mixed Vegetables and Brown Rice Recipe

Ingredients:

  • 1 lb. ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz.) diced tomatoes
  • 1 can (14 oz.) kidney beans, drained and rinsed
  • 1 can (14 oz.) corn, drained
  • 1 cup mixed vegetables (carrots, celery, zucchini), chopped
  • 2 cups cooked brown rice
  • 2 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tbsp. olive oil
In a large pot, heat the olive oil over medium heat. Add the ground turkey and cook until browned, stirring frequently. Add the onion, garlic, and bell pepper, and cook until softened, about 5 minutes.Add the diced tomatoes, kidney beans, corn, mixed vegetables, chili powder, cumin, smoked paprika, salt, and black pepper to the pot.
