Ingredients:
- 1 pound of pasta (penne or fusilli recommended)
- 3 tablespoons of butter
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 8 ounces of mushrooms, sliced
- 1 teaspoon of dried thyme
- 4 cups of fresh spinach
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
To start, cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, melt the butter over medium heat. Add the onion and garlic and sauté until fragrant, about 2-3 minutes. Add the mushrooms and thyme and cook until the mushrooms are tender and browned, about 5-7 minutes.
Add the spinach to the pan and stir until it's wilted. Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and combined. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss until coated in the sauce. Serve hot, topped with extra Parmesan cheese if desired.
