Delicious Soondae Recipe - Blood Sausage Stuffed with Noodles and Pork

Ingredients:

  • 1 pound pork belly, sliced into thin strips
  • 1 cup sweet potato noodles, cooked and chopped
  • 1/2 cup glutinous rice, soaked in water for 2 hours
  • 1/2 cup pig's blood, fresh or frozen
  • 1/4 cup garlic, minced
  • 1/4 cup onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1/4 cup vegetable oil

Instructions:

  1. In a large bowl, mix together the pork belly, sweet potato noodles, soaked glutinous rice, pig's blood, garlic, onion, salt, black pepper, ginger powder, nutmeg, and cinnamon until well combined.
  2. Stuff the mixture into the cleaned pig intestine, tying the ends with kitchen twine to make sausages.
  3. In a large pot, bring water to a boil and add the sausages. Cook for about 30 minutes until fully cooked.
  4. Remove the sausages from the pot and let cool for a few minutes before slicing into bite-size pieces.
  5. In a pan, heat vegetable oil over medium-high heat and fry the sliced soondae pieces until crispy and golden brown.
  6. Serve hot with spicy dipping sauce and enjoy!
