Ingredients:
- 8 oz of pasta (penne or fusilli works well)
- 2 tbsp of olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 8 oz of mushrooms, sliced
- 2 cups of spinach, chopped
- 1 cup of heavy cream
- 1/2 cup of grated parmesan cheese
- Salt and pepper, to taste
Instructions:
- Start by cooking the pasta according to the package instructions. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the diced onion and minced garlic to the pan and sauté for a few minutes until softened.
- Add the sliced mushrooms to the pan and cook until they are tender and browned, stirring occasionally.
