Delicious and Healthy Chicken and Vegetable Stir Fry Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breast, sliced into thin strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large onion, sliced
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions:

  1. Heat 2 tablespoons of olive oil in a wok or large skillet over medium-high heat.
  2. Add chicken strips and stir fry for 5-7 minutes, or until cooked through. Remove from pan and set aside.
  3. Heat the remaining tablespoon of olive oil in the same pan.
  4. Add garlic and ginger and stir fry for 1-2 minutes until fragrant.
  5. Add sliced onions and stir fry for 2-3 minutes, or until translucent.
  6. Add sliced bell peppers and broccoli florets and stir fry for 2-3 minutes, or until vegetables are slightly tender.
  7. Return chicken to the pan and stir fry for an additional 2-3 minutes, or until everything is heated through.
  8. Season with salt and pepper to taste.
  9. Serve hot with steamed rice or noodles.

Tips:

  • Feel free to substitute other vegetables based on what you have on hand or what's in season. Snow peas, carrots, and mushrooms would all be great additions!
  • For a spicy kick, add some crushed red pepper flakes or Sriracha sauce to the stir fry.
