Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 fresh pineapple, peeled, cored, and cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Wooden skewers, soaked in water for at least 30 minutes
Instructions:
- In a medium bowl, whisk together olive oil, soy sauce, honey, apple cider vinegar, garlic powder, and black pepper.
- Thread chicken, pineapple, and red onion onto skewers in an alternating pattern.
- Brush the skewers with the marinade, making sure to coat them evenly. Reserve some marinade for brushing while grilling.
- Preheat the grill to medium-high heat.
- Grill the skewers for 10-12 minutes, turning occasionally and brushing with the reserved marinade until chicken is cooked through and the pineapple is lightly charred.
- Serve hot and enjoy!
Tips:
If you're using wooden skewers, make sure to soak them in water for at least 30 minutes before grilling. This will prevent them from burning on the grill.
For added flavor, you can also marinate the chicken and pineapple in the refrigerator for up to 2 hours before grilling.
These skewers can be served as a main course or as an appetizer. If you're serving them as an appetizer, make sure to cut the chicken and pineapple into smaller pieces.
