Ingredients:
- 4 ears of fresh corn, husks removed
- 1 can black beans, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions:
- Preheat your grill to medium-high heat.
- Brush the corn with olive oil and season with salt and pepper to taste.
- Grill the corn for 10-12 minutes, or until lightly charred and tender. Remove from the grill and let cool.
- Once the corn has cooled, cut the kernels off the cobs and place them in a large bowl.
- Add the black beans, red bell pepper, red onion, and cilantro to the bowl with the corn.
- In a small bowl, whisk together the olive oil, lime juice, honey, cumin, chili powder, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
