Ingredients:
- 1 cup quinoa
- 1 1/2 cups water
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced

- 1 cup cherry tomatoes, halved

- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
