Ingredients:
- 4 large bell peppers, any color
- 1 lb lean ground beef
- 1 cup cooked brown rice
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrot
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese
To start, preheat your oven to 375°F and prepare your bell peppers by slicing off the tops and removing the seeds and membranes. Place the peppers into a baking dish and set aside.In a large skillet or frying pan, cook the lean ground beef over medium-high heat until browned and fully cooked. Drain any excess fat and add in the diced onion, celery, and carrot. Continue cooking until the vegetables are soft and tender.
Next, add in the cooked brown rice, diced tomatoes, garlic powder, dried oregano, dried basil, salt, and pepper. Stir to combine and cook for an additional 2-3 minutes.Spoon the beef and rice mixture into each of the bell peppers, filling them to the top. Sprinkle shredded mozzarella cheese on top of each pepper.
