Delicious Passover Sponge Cake Recipe

Ingredients:

  • 6 eggs, separated
  • 1 cup sugar
  • 1/2 cup potato starch
  • 1/4 cup matzo meal

  • 1/4 teaspoon salt

Start by preheating your oven to 350°F (175°C). Grease a 9-inch (23-cm) tube pan and set it aside.

In a large mixing bowl, beat the egg yolks with the sugar until creamy and pale yellow. Gradually add in the potato starch, matzo meal, vegetable oil, orange juice, orange zest, and salt. Mix well until everything is fully combined.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the egg yolk mixture until fully incorporated. Be careful not to overmix.
