Ingredients:
- 4 large portobello mushroom caps
- 4 whole wheat burger buns
- 1 large sweet potato
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional toppings: avocado, cheese, lettuce, tomato, onion, mustard, ketchup
To start, clean the portobello mushroom caps and slice them into 1/2-inch thick pieces. In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, salt, and pepper. Add the sliced mushrooms to the bowl and toss to coat. Let the mushrooms marinate for at least 30 minutes.
While the mushrooms are marinating, preheat your grill or grill pan to medium-high heat. Slice the sweet potato into thin fries and toss them with olive oil, salt, and pepper. Grill the sweet potato fries for 5-7 minutes on each side or until crispy.
Once the sweet potato fries are cooked, remove them from the grill and set them aside. Grill the marinated portobello mushrooms for 3-5 minutes on each side or until tender and slightly charred.Assemble your burgers by placing a grilled mushroom on a whole wheat bun and adding your favorite toppings. Serve with a side of sweet potato fries and enjoy!
