Ingredients:
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices of whole grain bread
- 1/4 cup hummus
- 4 slices of provolone cheese (optional)
To start, preheat your grill to medium-high heat. In a large bowl, toss the sliced zucchini, red and yellow bell peppers, and red onion with olive oil, salt, and black pepper until well coated.
Place the vegetables on the grill, and cook for 5-7 minutes, or until they are tender and slightly charred. Remove from the grill and set aside.
