Japchae Recipe - Stir-fried Glass Noodles with Vegetables and Meat

Japchae is a delicious Korean dish that is perfect for any occasion. It is a stir-fried dish made with glass noodles, vegetables, and meat. The dish has a unique flavor and is loved by many people around the world. In this recipe, we will show you how to make Japchae at home.

Ingredients:

  • 8 oz. sweet potato starch noodles
  • 1/2 lb. beef, sliced into thin strips
  • 4-5 shiitake mushrooms, sliced
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 red bell pepper, julienned
  • 1 bunch spinach, blanched and squeezed dry
  • 2 green onions, sliced
  • 2 tbsp. soy sauce
  • 2 tbsp. sugar
  • 1 tbsp. sesame oil
  • 1 tbsp. vegetable oil

Instructions:

  1. Bring a pot of water to a boil and cook the sweet potato noodles for about 5-7 minutes, or until they are soft. Drain and rinse the noodles under cold water. Cut the noodles into shorter pieces with scissors and set aside.
  2. Marinate the beef with 1 tbsp. soy sauce, 1 tbsp. sugar, and 1 tbsp. sesame oil. Set aside for at least 10 minutes.
  3. In a large pan or wok, heat the vegetable oil over medium-high heat. Add the garlic and onion and sauté until the onion is translucent. Add the mushrooms, carrot, and bell pepper and continue to sauté for another 2-3 minutes.
  4. Add the marinated beef and continue to stir-fry until the beef is cooked through.
  5. Add the cooked noodles and spinach to the pan and stir-fry for another 2-3 minutes.
  6. Add 1 tbsp. soy sauce and 1 tbsp. sugar to the pan and continue to stir-fry until everything is well combined.
  7. Garnish with sliced green onions and serve hot.
