Lentil Soup with Carrots, Celery, and Kale Recipe

This hearty and healthy lentil soup is loaded with nutritious vegetables and perfect for a cozy dinner on a chilly night. The combination of tender lentils, sweet carrots, crunchy celery, and earthy kale creates a flavorful and satisfying soup that will warm you from the inside out. Ingredients:

  • 1 cup dried lentils, rinsed and drained
  • 1 onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups kale, chopped
  • Salt and black pepper, to taste

Start by heating a large pot over medium heat. Add the onion, carrots, and celery and sauté for 5-7 minutes until they start to soften. Add the garlic and cook for another minute.

Add the lentils, vegetable broth, thyme, and bay leaf to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes until the lentils are tender.

Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted. Season with salt and black pepper to taste.
