Ingredients:
- 1 cup dried lentils, rinsed and drained
- 1 onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 cups kale, chopped
- Salt and black pepper, to taste
Start by heating a large pot over medium heat. Add the onion, carrots, and celery and sauté for 5-7 minutes until they start to soften. Add the garlic and cook for another minute.
Add the lentils, vegetable broth, thyme, and bay leaf to the pot. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes until the lentils are tender.
Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted. Season with salt and black pepper to taste.
