Spicy and Flavorful Yukgaejang Recipe: A Must-Try Beef Soup

Ingredients:

  • 1 lb. beef brisket, thinly sliced and shredded
  • 1 onion, chopped
  • 4 green onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp. gochugaru (Korean red pepper flakes)
  • 1 tbsp. soy sauce
  • 1 tbsp. sesame oil
  • 1 tbsp. vegetable oil
  • 8 cups beef broth
  • 1 cup bean sprouts
  • 1 cup sliced shiitake mushrooms
  • 1 cup fernbrake (gosari), soaked in water for 30 minutes
  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • Salt and pepper to taste
To start, heat the vegetable oil in a large pot over medium-high heat. Add the onion, green onions, and garlic and sauté for 2-3 minutes until fragrant. Add the beef and continue to sauté for 5-7 minutes until browned.Add the beef broth, soy sauce, and gochugaru to the pot and bring to a boil. Reduce heat to low and simmer for 30-40 minutes, until the beef is tender.Add the bean sprouts, shiitake mushrooms, fernbrake, carrots, and zucchini to the pot and continue to simmer for an additional 10-15 minutes, until the vegetables are tender.
