This homemade chicken noodle soup recipe is the perfect comfort food for a chilly day. It's easy to make and filled with nutritious ingredients like carrots and celery. Plus, it's a great way to use up leftover chicken!
To start, you'll need to gather your ingredients. You'll need:
- 1 pound boneless, skinless chicken breast
- 4 medium carrots, peeled and chopped
- 4 celery stalks, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 8 oz egg noodles
- 2 tbsp olive oil
- Salt and pepper to taste
Begin by heating the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
Add the chicken broth, carrots, and celery to the pot. Bring to a boil and then reduce heat to low. Add the chicken breasts and let them simmer in the broth until cooked through, about 20 minutes.
Remove the chicken breasts from the pot and shred them with two forks. Add the shredded chicken back to the pot along with the egg noodles. Cook until the noodles are tender, about 10 minutes.
Season the soup with salt and pepper to taste. Serve hot and enjoy!
