Ingredients:

  • 1 pound beef bones
  • 1 pound beef sirloin, thinly sliced
  • 1 onion, sliced
  • 4 garlic cloves, crushed
  • 2-inch piece of ginger, sliced
  • 1 cinnamon stick
  • 1 star anise
  • 4 cloves
  • 4 cups beef broth
  • 4 cups water
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 ounces dried rice noodles
  • 1 cup bean sprouts
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 2 limes, cut into wedges
  • 1 jalapeño, sliced

First, preheat your oven to 400°F. Place the beef bones on a baking sheet and roast for 30 minutes, or until browned. In a large pot, sauté the onion, garlic, and ginger until fragrant. Add the beef bones, cinnamon stick, star anise, and cloves to the pot. Pour in the beef broth and water and bring to a boil. Reduce the heat to low and simmer for at least 3 hours.

Once the broth is ready, strain it through a fine-mesh sieve and discard the solids. Return the broth to the pot and add the fish sauce and sugar. Bring the broth to a boil and add the rice noodles. Cook the noodles for 2-3 minutes, or until they're tender. Divide the noodles among 4 bowls and top with the thinly sliced beef.

Next, pour the hot broth over the beef and noodles. Top each bowl with bean sprouts, basil, cilantro, and mint leaves. Serve the Beef Pho with lime wedges and sliced jalapeño on the side.
