Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked brown rice
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 cup snow peas
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • Salt and pepper, to taste

Before you start cooking, make sure to have all of your ingredients prepped and ready to go. This will make the cooking process much smoother and efficient.

Start by heating the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they are pink and cooked through. Remove the shrimp from the pan and set aside.

In the same pan, add the sliced bell pepper, onion, and minced garlic. Cook for 2-3 minutes until the vegetables are slightly softened. Add the snow peas and mushrooms and cook for an additional 2-3 minutes.

In a small bowl, whisk together the soy sauce, honey, sesame oil, cornstarch, and water. Pour the sauce into the pan with the vegetables and stir to combine. Cook for 1-2 minutes until the sauce has thickened.

Add the cooked shrimp back into the pan with the vegetables and sauce. Stir to combine and cook for an additional 1-2 minutes until everything is heated through.

Serve the shrimp and vegetable stir-fry over a bed of brown rice and enjoy!
