Ingredients:
- 1 lb. chorizo sausage, diced
- 4 medium potatoes, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 2 tbsp. olive oil
- 1 tsp. paprika
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 4 eggs
- Cilantro, chopped (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add chorizo sausage and cook until browned, about 5 minutes.
- Add potatoes to the skillet and cook for an additional 5 minutes, stirring occasionally.
- Add red and green bell peppers, onion, and garlic to the skillet and cook for an additional 5 minutes.
- Add paprika, cumin, salt, and black pepper to the skillet and stir to combine.
- Crack eggs over the hash and cover the skillet. Cook until the eggs are set, about 5 minutes.
- Garnish with chopped cilantro, if desired.
