Baked Chicken Parmesan with Spaghetti Recipe

Ingredients:

  • 1 pound spaghetti
  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups Italian-seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 425°F (220°C). Lightly grease a baking sheet with olive oil.
  2. Cook spaghetti according to package instructions until al dente.
  3. Combine breadcrumbs, Parmesan cheese, salt, and black pepper in a shallow dish.
  4. Place flour in a separate shallow dish.
  5. Beat eggs in another shallow dish.
  6. Coat each chicken breast in flour, then dip in beaten eggs, and finally coat in breadcrumb mixture, pressing to adhere.
  7. Place chicken on prepared baking sheet and drizzle with olive oil. Bake for 20-25 minutes or until golden brown and cooked through.
  8. While chicken is baking, heat marinara sauce in a small saucepan over low heat.
  9. When chicken is done, remove from oven and spoon marinara sauce over each chicken breast. Top with shredded mozzarella cheese.
  10. Return chicken to oven and bake for an additional 5-10 minutes, or until cheese is melted and bubbly.
  11. Drain spaghetti and serve with chicken Parmesan.
