Ingredients:
- 1 pound spaghetti
- 4 boneless, skinless chicken breasts
- 1 1/2 cups Italian-seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 425°F (220°C). Lightly grease a baking sheet with olive oil.
- Cook spaghetti according to package instructions until al dente.
- Combine breadcrumbs, Parmesan cheese, salt, and black pepper in a shallow dish.
- Place flour in a separate shallow dish.
- Beat eggs in another shallow dish.
- Coat each chicken breast in flour, then dip in beaten eggs, and finally coat in breadcrumb mixture, pressing to adhere.
- Place chicken on prepared baking sheet and drizzle with olive oil. Bake for 20-25 minutes or until golden brown and cooked through.
- While chicken is baking, heat marinara sauce in a small saucepan over low heat.
- When chicken is done, remove from oven and spoon marinara sauce over each chicken breast. Top with shredded mozzarella cheese.
- Return chicken to oven and bake for an additional 5-10 minutes, or until cheese is melted and bubbly.
- Drain spaghetti and serve with chicken Parmesan.
