Chicken Satay is a popular Southeast Asian dish that is loved for its marinated and grilled chicken skewers served with a delicious peanut sauce. This dish is perfect as an appetizer or even as a main course. Here is a simple and easy recipe that you can try at home:

Ingredients:

  • 1 lb boneless chicken breast or thigh, sliced into thin strips
  • 1 tbsp. vegetable oil
  • 1 tbsp. soy sauce
  • 1 tbsp. brown sugar
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. turmeric powder
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • Bamboo skewers, soaked in water for 30 minutes

In a large bowl, mix together the vegetable oil, soy sauce, brown sugar, cumin, coriander, turmeric powder, salt, and cayenne pepper until well combined. Add the chicken strips to the bowl and coat them evenly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Preheat your grill to medium-high heat. Thread the chicken strips onto the soaked bamboo skewers, making sure to leave a little space between each piece. Grill the chicken skewers for 6-8 minutes, turning occasionally, until they are cooked through and slightly charred.

Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp. soy sauce
  • 2 tbsp. brown sugar
  • 1 tbsp. lime juice
  • 1 garlic clove, minced
  • 1/4 tsp. cayenne pepper

In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, brown sugar, lime juice, garlic, and cayenne pepper until smooth and well combined. If the sauce is too thick, add a little water to thin it out. Serve the peanut sauce alongside the chicken skewers.

Enjoy!
