Delicious and Easy Chicken Katsu Curry Recipe

If you're a fan of Japanese cuisine, you must have tried the famous Chicken Katsu Curry dish. This dish is a combination of crispy chicken cutlets and creamy curry sauce, served with rice. It's a perfect meal for any day, and it's easy to make at home.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 tablespoon vegetable oil
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons curry powder
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

The first step is to prepare the chicken cutlets. Season the chicken breasts with salt and pepper. Place the flour in a shallow dish and beat the eggs in another dish. Place the panko breadcrumbs in a third dish. Coat each chicken breast in flour, then dip in the beaten eggs, and finally coat in the breadcrumbs. Heat the vegetable oil in a large skillet over medium-high heat. Cook the chicken cutlets for 4-5 minutes on each side or until golden brown and crispy.

While the chicken is cooking, prepare the curry sauce. Heat a tablespoon of vegetable oil in a pot over medium heat. Add the chopped onions and carrots and cook until soft. Add the minced garlic and curry powder and cook for another minute. Sprinkle the flour over the vegetables and stir to combine. Gradually add the chicken broth, stirring constantly. Add the honey, soy sauce, and rice vinegar. Bring the sauce to a simmer and cook for 10-15 minutes or until thickened. In a small bowl, whisk together the cornstarch and 2 tablespoons of water. Add the cornstarch mixture to the sauce and stir until fully incorporated. Cook for another 2-3 minutes or until the sauce has thickened.
