Delicious Chicken and Spinach Lasagna Recipe

Ingredients:

  • 12 lasagna noodles
  • 1 lb. ground chicken
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 jar tomato sauce
  • 2 cups fresh spinach leaves
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • Salt and pepper to taste

Start by cooking the lasagna noodles according to package directions. In a large skillet, heat the olive oil over medium heat. Add the ground chicken and cook until browned, breaking it up into small pieces as it cooks. Add the onion and garlic and cook until the onion is translucent.

Add the diced tomatoes and tomato sauce to the skillet and stir to combine. Add the spinach and stir until the spinach is wilted. Remove the skillet from the heat and set it aside.

In a separate bowl, mix together the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, basil, oregano, salt, and pepper.

To assemble the lasagna, spread a layer of the chicken and tomato mixture in the bottom of a 9x13 inch baking dish. Place a layer of cooked lasagna noodles on top of the tomato mixture. Spread a layer of the ricotta cheese mixture on top of the noodles. Repeat these layers until all of the ingredients are used up, ending with a layer of the chicken and tomato mixture on top.

Sprinkle the remaining cup of mozzarella cheese on top of the lasagna. Cover the baking dish with aluminum foil and bake in a preheated 375 degree oven for 25 minutes. Remove the foil and bake for an additional 25 minutes or until the cheese is melted and bubbly.
