Delicious Chicken Enchiladas Recipe

Chicken Enchiladas are a classic Mexican dish that is perfect for a family dinner or a gathering with friends. This flavorful dish is made with tender chicken, warm tortillas, and a rich sauce that will leave your taste buds craving for more. Here is an easy and delicious recipe for Chicken Enchiladas that you can make at home.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 can (4 ounces) diced green chilies
  • 1 can (10 ounces) enchilada sauce
  • 8-10 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Start by cooking the chicken breasts until they are tender and can be easily shredded. You can use a slow cooker or an Instant Pot for this step to save time. Once the chicken is cooked, shred it into small pieces and set aside.

In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and garlic and sauté until the onions are translucent and the garlic is fragrant. Add the diced tomatoes, green chilies, and enchilada sauce to the skillet and stir until the ingredients are well combined.
