If you're looking for a quick and easy meal that's packed with flavor, try making these chicken fajitas with tortillas and guacamole. This recipe is perfect for a weeknight dinner or a weekend gathering with friends and family.
Ingredients:
- 1 pound of boneless, skinless chicken breasts, sliced into thin strips
- 2 tablespoons of olive oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- Salt and black pepper, to taste
- 8 flour tortillas
- 1/2 cup of guacamole
To start, heat up a large skillet over medium-high heat with 1 tablespoon of olive oil. Add the sliced chicken breasts and season with chili powder, cumin, paprika, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil and sauté the sliced onions and peppers until they are tender and slightly charred, about 5-7 minutes. Add the minced garlic and cook for another minute.
Warm up the flour tortillas in the microwave or oven. Divide the cooked chicken and vegetables evenly among the tortillas. Top each fajita with a spoonful of guacamole and wrap it tightly. Serve immediately and enjoy!
Tips:
- Feel free to use any color of bell pepper you prefer for this recipe.
- If you want to add some heat to the fajitas, you can add some sliced jalapenos or a dash of hot sauce.
- You can make your own guacamole by mashing together ripe avocados, diced tomatoes, minced onions, and lime juice.
