Ingredients:

  • 4 boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup mirin
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 2 cups cooked white rice
  • 4-6 bok choy, steamed

First, preheat your oven to 400°F. In a small bowl, mix together soy sauce, honey, mirin, rice vinegar, sesame oil, garlic, and ginger to make the teriyaki sauce.

Next, place the chicken thighs in a baking dish and pour the teriyaki sauce over them, making sure they are coated evenly. Bake for 25-30 minutes or until the chicken is cooked through and the sauce has thickened and caramelized.

While the chicken is cooking, prepare your rice according to the package instructions. Once cooked, fluff with a fork and set aside.

For the bok choy, bring a pot of water to a boil and place the bok choy in a steamer basket. Steam for 3-5 minutes, or until tender.

When the chicken is done, remove it from the oven and let it rest for a few minutes before slicing it. Serve the chicken on a bed of rice with the steamed bok choy on the side. Drizzle any remaining teriyaki sauce on top of the chicken and enjoy!
