Ingredients:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 zucchini
  • 1 yellow squash
  • 1 package of cherry tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Cut the bell peppers, onion, zucchini, and yellow squash into bite-sized pieces.
  3. In a small bowl, whisk together the olive oil, garlic, oregano, salt, and pepper.
  4. Thread the vegetables onto skewers, alternating colors for a beautiful presentation.
  5. Brush the skewers with the olive oil mixture.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  7. While the skewers are grilling, prepare the tzatziki sauce by combining 1 cup of plain Greek yogurt, 1/2 cup grated cucumber, 1 clove of minced garlic, 1 tablespoon chopped fresh dill, and 1 tablespoon of lemon juice. Mix well and season with salt and pepper to taste.
  8. Serve the grilled vegetable kabobs hot, with a dollop of tzatziki sauce on the side.

Tips:

  • If you are using wooden skewers, be sure to soak them in water for at least 30 minutes before threading the vegetables onto them. This will prevent them from burning on the grill.
  • You can use any combination of vegetables that you like for these kabobs. Try adding mushrooms, eggplant, or even pineapple for a sweet and savory twist!
  • If you don't have a grill, you can also cook these kabobs in the oven. Simply place them on a baking sheet and roast at 425 degrees F for 15-20 minutes, or until the vegetables are tender.
