Ingredients:
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 egg
- 1 cup warm water
- 1/4 cup vegetable oil
- 1/4 cup ghee or butter
- Curry sauce or dal for serving
Start by mixing the flour, salt, and sugar in a large mixing bowl. In a separate bowl, beat the egg and add warm water. Gradually pour the egg mixture into the flour mixture and mix until you get a smooth dough. Knead the dough for about 10 minutes until it becomes elastic and smooth. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
After the dough has rested, divide it into small portions and roll each portion into a ball. Flatten each ball with your hands and stretch it as much as you can without tearing it. Brush some vegetable oil on top of each flattened dough and sprinkle some flour on top. Fold the dough into a square shape and brush more oil on top. Repeat the folding process until the dough becomes a small square. Let the dough rest again for about 10 minutes.
Heat a non-stick frying pan over medium heat. Brush some ghee or butter on the pan. Take one of the dough squares and roll it out as thin as possible. Place the flattened dough onto the frying pan and cook for about 2 minutes on each side, or until it becomes golden brown and crispy. Repeat the process for the remaining dough squares.
