Delicious Shrimp and Vegetable Curry with Brown Rice Recipe

Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 1 cup brown rice

  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 can coconut milk
  • 2 tbsp. curry powder
  • 1 tsp. cumin
  • 1 tsp. turmeric

Start by cooking the brown rice according to the package instructions. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for a few minutes until softened.
