Shrimp scampi with linguine is a classic Italian-American dish that is not only easy to make but also delicious. This recipe is perfect for a quick weeknight dinner or a special occasion. The combination of succulent shrimp, garlic, butter, and lemon juice makes this dish a crowd-pleaser.
Ingredients:
- 1 pound linguine
- 1/2 cup unsalted butter
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 pound large shrimp, peeled and deveined
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper
Start by cooking the linguine according to package instructions until it is al dente. While the pasta is cooking, melt the butter and olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink. Remove the shrimp from the skillet and set aside.
Add the white wine and lemon juice to the skillet and bring the mixture to a simmer. Cook for about 5 minutes until the sauce has reduced slightly.
Add the cooked linguine to the skillet and toss it in the sauce until it is well coated. Add the cooked shrimp back to the skillet and toss gently to combine.
Season with salt and freshly ground black pepper, and sprinkle with chopped parsley. Serve hot and enjoy!
