Ingredients:
- 1 lb. ground beef
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 1 can (28 oz.) diced tomatoes, undrained
- 1 can (15 oz.) kidney beans, drained and rinsed
- 1 can (15 oz.) black beans, drained and rinsed
- 2 tbsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. cayenne pepper
- Salt and pepper, to taste
Instructions:
- In a large skillet, cook the ground beef over medium heat until browned. Drain the excess fat and transfer the beef to the slow cooker.
- Add the onion, bell peppers, and garlic to the slow cooker.
- Add the diced tomatoes, kidney beans, black beans, chili powder, cumin, paprika, cayenne pepper, salt, and pepper to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours, or until the vegetables are tender and the flavors are well combined.
- Serve hot with your favorite toppings, such as shredded cheese, sour cream, or avocado.
