Ingredients:
- 1 pound ground beef
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chilies
- 8-10 corn tortillas
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
To start, brown the ground beef in a large skillet over medium-high heat. Add the diced onion and garlic and cook until the onions are translucent. Drain any excess fat from the skillet.
Next, add the enchilada sauce and diced green chilies to the skillet. Stir to combine and season with salt and pepper to taste. Let the mixture simmer for 5-10 minutes.
While the beef mixture is simmering, warm the corn tortillas in a separate skillet over medium heat. This will make them more pliable and easier to work with.
Once the tortillas are warmed, spoon a generous amount of the beef mixture onto each tortilla and sprinkle with shredded cheddar cheese. Roll up the tortillas tightly and place seam-side down in a baking dish.
Finally, top the enchiladas with any remaining beef mixture and sprinkle with more shredded cheese. Bake in a preheated oven at 350°F for 20-25 minutes, or until the cheese is melted and bubbly.Serve hot and enjoy the delicious flavors of this classic Mexican dish!
