Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped sun-dried tomatoes
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add chopped spinach and sauté until wilted.
- Remove skillet from heat and add crumbled feta cheese and sun-dried tomatoes. Mix well.
- Using a sharp knife, cut a pocket in each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the spinach and feta mixture.
- Season each chicken breast with salt and pepper to taste.
- Place chicken breasts in a baking dish and bake for 25-30 minutes or until the internal temperature of the chicken reaches 165°F (75°C).
